What We're Eating

Good morning! Everyone have a good weekend? I surely did. Dearest Carl and I got through all of Netflix's Series of Unfortunate Events and even had time to squeeze in Sherlock's last episode (which was a doozy). I also went with Olivia to Barnes and Noble and I did not come out with a book. That is a serious feat for me because books are my weakness. In all, it was a restful and lovely weekend!

This week we're eating our stuffed shells leftovers along with these delicious recipes. The sausage gravy recipe is the same my dad and my grandpa have made so it comes with extra cozy memories.

Monday: Broccoli and Cheese Soup
Tuesday: Sausage Gravy and Biscuits
Wednesday: Chips with Cheese Dip and Guacamole
Thursday: Fish and Green Beans
Friday: Grilled Cheese and Tomato Soup

What are you warming up with this week?

What We're Eating

Good morning! Everybody have a good weekend? Ours was just lovely. It was the perfect mix of socializing and relaxing and now I'm ready to tackle the week. This week I'm looking forward to a movie night with my sister, dinner with the Iceland crew and then Friday's stay at home date night!

We weren't home enough to eat turkey this weekend so I'm still trying to think of ways to cook with it. Hence the turkey noodle soup. We've also put it on salad and I could still make wraps. Maybe I should write a book about all the ways to use up a turkey...

Monday: Turkey Noodle Soup and Biscuits
Tuesday: BLTs, Chips and Fruit
Wednesday: Cheese and Crackers
Thursday: Stuffed Shells and Breadsticks
Friday: Ordering pizza to eat while we binge on Netflix's new Series of Unfortunate Events!

What are you cooking up this week?

What We're Eating

Happy new year! I hope everyone had a great new years celebration over the weekend! Our party was a great success and we didn't get to bed until 3:30 am. Just a little past my bedtime. Then yesterday, Dearest Carl and I sat down and drew up a list of monthly goals for 2017, going all the way to December. It was great to think about things we wanted to achieve, personally and together, and to come up with specifics for success. It's probably the most productive thing we've ever done. So we're starting off the week with a good handle on 2017 and that's the best I could ever ask for.

This week's menu came together when I realized I had a turkey in the freezer. So I'm cooking that up because I can and I'm going to work it into almost every meal all week.

Monday: Clam Chowder, Cheese and crackers
Tuesday: Turkey, Green Beans and Sweet Potatoes
Wednesday: Turkey Pot Pie
Thursday: Turkey and Brie Quesadillas
Friday: Sweet Potato Breakfast Bowl

What We're Eating

Good morning! I hope you're taking it slow this morning and reading this still in your pjs, with coffee in hand and plenty of Christmas goodies to graze on. I'm taking the day off today to spend with Dearest Carl and Charlie and all the wonderful presents. The joys of freelance work. After last week's frenzy of activity, I kind of need a day to just soak up my husband's company.

This week's menu is good but simple. It's one of those "I spent all the grocery money on desserts" weeks but at least I didn't default to ramen! Be proud.

Monday: Tomato Soup and Grilled Cheese
Tuesday: Pizza
Wednesday: Quiche
Thursday: Asian Noodles
Friday: Pizza with Watkins

What We're Eating

It's Christmas week! After the loveliest weekend with lots of husband quality time and bff quality time and coffee, I'm taking the week off writing so I can get all my baking done and my presents wrapped and my house cleaned for Christmas Eve guests. It promises to be a week full of Christmas music, holiday movies and general cheer. And after a relaxing weekend, I'm quite ready to do some baking.

In last week's grocery trip, I basically cleaned Aldi out of chocolate chips and sweetened condensed milk, so the menu is based off of what's in the pantry and freezer. But I think I did a pretty good job anyway! You can't go wrong with tortellini.

Monday: Tortellini Soup
Tuesday:Christmas Movie Night! Popcorn and Eggnog
Wednesday: Pancakes
Thursday: Crab Bundles (This recipe but with crab instead of chicken.)
Friday: Pizza with Watkins

What We're Eating

This weekend didn't quite go as planned. I got the nasty cold that's been going around and I've been like Walter at the beginning of this clip. Ask Dearest Carl. So I spent a good amount of time on the couch, drinking water and playing Minecraft. Today is another day at home and I'm starting it off in a great mood! You know that you did something right when you are looking forward to the week ahead. Last week I ditched the newest writing gig (too much stress to be worth it) so I actually have time to bake and enjoy like... life! Plus, our house is all Christmasy now and I have plans to road trip to IKEA with my mom and Grandma. It doesn't get much better than that.

In other news, I'm super stoked about this menu, you guys. The chicken pot pie recipe is the most amazing pot pie I have EVER had! Seriously, put it on your menu. It's one that you won't mind eating leftovers of... if there are any.

Monday: Beaucoup Seafood Chowder and Biscuits
Tuesday: Chicken Quesadillas
Wednesday: Chicken Pot Pie
Thursday: Salmon Melts and Chips
Friday: Pizza with Watkins

What's on your menu this week? Making any Christmasy desserts I should know about?

What We're Eating

Woah, what a weekend! So much happened over here. First, Bekah and I got through our Harry Potter marathon and it was fantastic. You catch so much more detail when you watch them all in a row and she is the master of HP trivia. Also, Dearest Carl finished the floor!!! The smell made us evacuate our house for two nights, cat and all, but I have amazing in-laws who let us crash in their spare bedroom. Now we're home though, the floor looks amazing (I mean AHmazing!!!) and I'm plotting to put all the furniture back in place and set up the tree as soon as I possibly can!

This week is a spread of good food. I'm super excited to try out tonight's soup! Lasagna is wonderful in it's usual form and I think as a soup, it will be to die for. So much cheese.

Monday: Lasagna Soup
Tuesday: Salmon Melts and Fruit
Wednesday: Pancakes
Thursday: Celebrating my little sister's birthday!
Friday: Pizza

What We're Eating

Mondays after a long weekend are hard. But at least this Monday we can blare our Christmas music and test our hands at homemade peppermint mochas. I got out a few Christmas decorations on Friday so our house has some Christmasy spots. The wreaths are hanging on the windows so if you drive by, you couldn't tell that the inside isn't as cheery as the outside. Here's to hoping and praying it will be all glittery soon!

Today I'm venturing to the grocery. Usually Fridays are grocery days but I travel to no store the weekend after Thanksgiving. I'm banking on the fact that today is Cyber Monday so everyone should be buying things from their computers at home, right? I have a crock pot soup I need to get going so it needs to be a quick trip! Other than that, I'm going to do my best to make simple meals because I have to make a heck of a lot of Christmas candy this year and that requires a lot of sweetened condensed milk.

Monday: Crock Pot Beer Cheese Soup and Pretzels
Tuesday: Pigs in a Blanket and Carrots
Wednesday: Guacamole and Cheese
Thursday: Pancakes
Friday: Pizza with the Watkins

What We're Eating

Happy Monday! Aren't Mondays better when you know it's a short work week? I think so. How was your weekend? Mine was spent mostly in bed with the cat, drinking La Croix Sparkling Water and watching movies while Dearest Carl spent too many hours refinishing the living room floor. It still isn't finished but it's well on the way! I can actually envision what our living room will look like now which is wonderful. I can plan better and decorated better in my head. However, putting up the Christmas tree is postponed. Hopefully only one more week.

Obviously there is only a little going on in the kitchen this week. Once we hit the holidays, we spend lots more time with family and friends and less time cooking in my own kitchen. Which is great but I feel like I make it up in baked goods. We'll see how I do this year...

Monday: Tomato Soup and Grilled Cheese
Tuesday: Nacho Cheese and Guacamole
Wednesday: Rice with my family
Thursday: Thanksgiving!
Friday: With the Dearest Carl's family

What We're Eating

Good morning! How was everyone's weekend? Mine was so full of learning and good fellowship with the wonderful ladies from my church. This morning though, I'm glad to be home with my husband and my cat. Today I'm taking it slow, filling up my introvert tank with music and Netflix and soup while I work and listen for the dryer finish. Also, Dearest Carl lost his mind while I was gone and turned on the heat in the house so it was actually not freezing when I woke up this morning. What? I forgot you could do that...

I'm really loving our menu this week. Yes, we're grilling out on Thursday because I had to get it in one more time before it snows. Though I don't think that would deter Dearest Carl.

Monday: Angie's Potato Soup (similar) and Biscuits
Tuesday: Crock Pot Sweet Potatoes and Summer Sausage
Wednesday: I'm out to dinner for my sister-in-law's birthday so Dearest Carl gets leftovers.
Thursday: Hamburgers and Fries
Friday: Pizza With the Watkins

What We're Eating

I'm still trying to wrap my head around the fact that it's November. Didn't we just make our New Years resolutions? And now we're looking at Thanksgiving and I heard somebody say there's only 7 Fridays until Christmas... I'll just leave that there. How was your weekend? Mine was fabulous. I had time on Saturday to relax and drink cider and I had a coffee date with my best friend yesterday afternoon, plus that extra hour of sleep. And I got all my Christmas presents ordered. That's right, I'm all over preparation this year. Boom.

This week's menu is gonna be sweet. I bought a whole chicken for the first time ever and I'm excited to try that crock pot recipe! I just love good cooking weeks.

Monday: Broccoli and Cheese Soup
Tuesday: Crock Pot Chicken and Green Beans
Wednesday: Chicken Pot Pie
Thursday: Pumpkin Pancakes
Friday: Pizza with the Watkins fam

What We're Eating

Happy Monday and happy Halloween! How was your weekend? Ours was just amazing. While we didn't have as big of a camping crew as we originally anticipated, it actually was one of the best trips yet! We drove Friday night to the Indiana Dunes and spent Saturday hiking those dunes and pretending like we were at the ocean. It was perfect weather (despite a rain shower on Saturday night) and we ate so much food. Really, we will be revisiting the dunes next year. For now, I'm quite happy to be home, back to my bed and my kitty. With extremely sore legs. No one tells you how hard it is to hike up a mountain of sand...

Tonight we're headed to the Watkins for a little Halloween party and then it's the normal stuff the rest of the week. I've got about a million things to do so it's a good thing I've got simple meals planned! Yay for noodles!

Monday: Partying it up with the Watkins fam
Tuesday: Sausage Kale Soup
Wednesday: Asian Ramen Noodles
Thursday: Fettuccini Alfredo and Garlic Bread
Friday: Pizza with the Watkins fam

Are you eating any scary treats tonight? Or just as much candy as possible?

What We're Eating

Happy Monday! After a weekend full of baking and socializing, I'm ready for a quiet Monday at home, drinking coffee and getting work done and listening to good music. Today I'm starting a new freelance job for The Things so this week promises to be an interesting one. We're also hoping to get tons done on the living room. November is closing in you guys and it's making me uncomfortable... But Dearest Carl is slowly but surely getting things done.

This week's menu has a lot of pizza on it. Because I spent all my grocery money on ingredients for the weekend's desserts so that means we're eating what I have in the pantry and freezer. Which is lots of pizza. But I'm okay with that.

Monday: Tomato Soup, Grilled Cheese
Tuesday: Pigs in a blanket
Wednesday: Pizza
Thursday: Pancakes
Friday: Pizza

Go ahead. Make me jealous with your menu. What are you eating this week?

What We're Eating

Mmmm what a weekend. You know those weekends when you read and drink coffee and do laundry and don't work by a to do list? That was pretty much mine. I bought peppermint mocha creamer at the grocery Friday and now the Keurig doesn't turn off. It's my favorite, even if it is a Christmas flavor. But anyway, while I did laundry and bathed the gray-who-should-be-creamy-orange cat, Dearest Carl and a couple guys did some great work on the living room project! There are still a few steps before we can start mudding but it's coming along!

Our week ahead is quite full of good things, both on the calendar and in the menu. We're pushing Monday soup to Tuesday this week since I won't be here to make it but when I do, I'll probably eat it every day for the rest of the week. But that's okay with me.

Monday: I'm out with the girls tonight so Dearest Carl is probably eating a sandwich per usual.
Tuesday: Please May I Have Some More Soup and Beer Bread
Wednesday: Quiche
Thursday: Possibly pizza? Possibly leftover soup? Not sure.
Friday: Pizza with Dearest Carl's fam

What We're Eating

Good morning! How is your week looking? Our weekend was quite productive with lots of ice cream so we're looking at this week with a little more hope. Plus, there are these in the cookie jar. Saturday we watched Pride and Prejudice and Zombies, my third time and Dearest Carl's first. That was quite interesting. He laughed a lot which I consider a good thing.

This week there isn't really much cooking going on in the kitchen so I fully intend to savor tonight's soup. I'm pretty sure that crock pot soups are my favorite. They're usually simple to put together and there's less clean up. So if you can find a crock pot version of your favorite soup, I highly recommend it.

Monday: Crock Pot Chicken and Gnocchi
Tuesday: Chicken Taco Salad
Wednesday: Pizza Rolls
Thursday: Dinner with a friend
Friday: Pizza with Dearest Carl's family

What We're Eating

It's October you guys! I'm having a little trouble believing that we're already looking at holidays and winter hibernation again. Don't get me wrong, I'm not complaining! Just wondering where the time went.

We had a simply wonderful weekend, if you were wondering. Saturday it barely rained and was chilly enough to enjoy being outside most of the day at the Feast. And when we got home, we spent a cozy evening together. I'm not sure I'm ready for another week yet but like it or not, Monday is here. At least there will be soup tonight! Starting off with a simple favorite since I have a late afternoon meeting.

Monday: French Onion Soup
Tuesday: Spaghetti and Meatballs (leftover from last week)
Wednesday: Salmon melts and Chips
Thursday: Pizza Rolls
Friday: Birthday dinner for my little brother!

What kinds of soup are you looking forward to?

What We're Eating

Deep breaths. Today didn't start out like I had anticipated. Instead of quiet and calm, it was loud and rushing and confusing. A bit of a jolt for a Monday morning. But the house has finally been restored to tranquility and I'm sitting here with my coffee enjoying the cozy rain. This week we are insanely busy. Along with the usual work schedule, one or both of us have a commitment every night. All good things but I'm looking forward to the weekend already.

You might have noticed that the menu doesn't have any links. That's because it's the end of the month so we're surviving off of what's in the pantry. I think I did pretty good though!

Monday: I have a dinner with ladies at church so Dearest Carl gets a sandwich.
Tuesday: Spaghetti and Meatballs
Wednesday: Asian Shrimp and Broccoli on Rice
Thursday: Grilled Cheese and Tomato Soup
Friday: Having a bonfire with friends!

What We're Eating

Good morning! How was your weekend? Ours was quite pleasant. I made pumpkin spice pancakes and pumpkin spice granola and I still haven't satisfied my urge to bake. (Any tips?) I also got to have a coffee date with my best friend. So I'm quite satisfied and ready to begin another week, even if it's crazy busy.

This week we're looking at another cozy menu. I'm hoping that if I keep making cozy recipes like mac n' cheese and pancakes, the weather will get the hint and give us 70 degrees instead of 80. Only two more weeks until we start having soup! Get your soup pot out from the back of the pantry! I'm just a little bit excited if you couldn't tell...

Monday: Brie Apple Bacon Quesadillas
Tuesday: Sandwich wraps and Fruit
Wednesday: Grilled Cheese and Tomato Soup
Thursday: Pancakes
Friday: Pizza with the in-laws

What We're Eating

I love slow Mondays. You've probably heard me say that before, but I'm saying it again. They just are. Especially when you get to start it with an inbox full of good blog posts to read and the anticipation of posting some pretty great ones yourself. Yes, sometimes Mondays are happy days. Anyway, how was your weekend? Mine was fantastic! I made cookies and got to spend time with family and Dearest Carl brought me my first Pumpkin Spice Latte of the year. It's finally getting cool enough to enjoy the steaming cup of coffee and I have absolutely no complaints.

This week I'm pretty excited to try out this new Mac n' Cheese recipe! I'm not usually a fan of mac n' cheese but this one sounded good. Plus I'll have enough leftover ingredients to make a quiche later. So everybody's winning.

Monday: Loaded Chicken Salad
Tuesday: Spinach Artichoke Mac n' Cheese
Wednesday: Sandwich Wraps and Chips
Thursday: Spinach Artichoke Quiche
Friday: Having a cookout with the worship team from our church!

What We're Eating

Yes, today is a holiday. But I still have to post the menu! Are we all officially ready for Fall now? Fall is my favorite. There's so much to look forward to! The cooler temperatures and pulling out my scarves and boots again. Opening the windows and watching the leaves turn colors. Drinking Pumpkin Spice Lattes and making Pumpkin Spice flavored desserts. Getting to see season premiers of your favorite shows and having cookouts around a bonfire. I could go on. And yes, I know Fall isn't technically until September 22 but I'm not waiting that long.

In case you were wondering, I have promised to wait until October to bring back Monday Soups. So just hold off stocking up on potatoes and chicken broth. In the mean time, I am going to try to make some cozier recipes. Maybe the weather will get the hint and cool off!

Monday: Having a cookout with my family!
Tuesday: Pan Crisped Deviled Egg Salad and Sausage (leftover from last week)
Wednesday: Swedish Meatballs and Sweet Potatoes
Thursday: Chinese Ramen
Friday: Pizza with the Watkins before we all go swing dancing!

What cozy recipes are you looking forward to?
